Freezing cake covered in ganache

Hi Kmmein

Yes, itโ€™s fine. Open freeze the cake first to make the ganache nice and hard. It only takes about twenty minutes. Once frozen, cover the cake with several layers of cling film and double box it. This will help prevent freezer burn. It will be good for three months.

When defrosting, take cake out of the freezer twenty four hours before required and let it sit at room temperature in the cling. If you prefer to defrost in the fridge, remove the cake a couple of days before required, take it out of one box and let it defrost still covered in the other. ?
