Wedding cake with SMBC
I want to know how long a cake covered in SMBC can be left out of fridge? If I refrigerate cake once filled and covered, will it go soft and start bulging once taken out? I have to make a semi-naked wedding cake for July & worried that cake won’t be stable once it’s taken out of fridge and left at the venue all day.

A cake covered in SMB will be pretty stable at room temperature for at least a couple of days. However, if temperatures are unusually high, it will, like any other buttercream, begin to soften. As long as you can manage to keep it in a cool environment, it should behave well. Most wedding venues are airconditioned, but even so, choose the cake setup position away from direct sunlight or too close to windows. It will also help to display the cake as close to serving time as possible if conditions are extreme.
