Airbrushing an iced cake
Hi
Please can somebody remind me how long a sugar paste iced cake needs to dry before it can be airbrushed?
I have read that it should be left for up to 36hrs but I need to airbrush colour mine sooner than that.
Any help would be very much appreciated thanks.

I don’t airbrush but I have painted lots of cakes. I usually allow the fondant to form a crust. So, depending on humidity, allow overnight drying, and it should be good to go.
Marzipan has a longer drying time of usually 2 to 3 days. That’s not so much for painting but for drying off the oils before applying fondant.

Many thanks for your help.
I was a bit pushed for time, so ended up having to airbrush the cake about 5 hours after after icing it. Thankfully it was absolutely fine.

That’s great news. I have an airbrush but I’ve never got on with it. Painting a cake takes a lot longer and sometimes the result isn’t as professional as airbrushing if the fondant hasn’t crusted over well.
I seldom do cakes now and most of my cake decorating equipment just lays idle.
