Sugar Paste.
hi i am new to this, i’ve started my first cake and while decorating it the sugar paste gets damp and sticky!! and really sure why do any one what im doing wrong i do keep the cake in the fridge

Hi bcky37, sugar paste can become sticky due to humidity (too much moisture in the air). If you subscribe to the tutorial library look at the way Paul kneads his sugar paste, the amount of icing sugar he uses and the way he rolls out. Adding icing sugar to sticky icing can firm it up a bit but, it can also cause it to dry out too much making it crack when you roll it out. Sugar paste should not be stored in the fridge as moisture makes it ‘melt’ and it becomes a sticky mess so don’t put your decorated cake in the fridge, just leave it out on your worktop, keep it well ventilated and the iced cake will dry smoothly.

Totally agree with madeitwithlove. You could try changing your brand of paste (or are you making it yourself). I once tried a brand that was horrible but I haven’t seen it on sale lately. Karen Davies paste is expensive but may be worth a try in this hot weather.
