Setting ganache

Hi all..silly question maybe..but if your fridge isn’t large enough to encorporate your cake and cake board how long would it take for the ganache to set in between each stage

As many of you may have guessed by now I google lots of queries (used to work in a library).  I came across this site http://www.flickr.com/groups/cakedecorating101/discuss/72157623284524417/  which was a discussion on ganache.  Someone suggested 12 hours at room temperature but I would guess it also depends on the weather.  I made some the other day and thought it would never set.  Guess I didn’t give it long enough!  I think I read adding more chocolate gave a firmer result but may need correcting on that!

If using dark chocolate I find it sets very quickly compared to White and milk. Usually by the time I’ve finished coveribeeps already began to set
