Best Fondant.

Hi,just wondered if any body could recommend a good fondant to use,I don’t like to use realise as I find it very sticky to work with. Thanks in advance.

I use covapaste and dust my green board lightly with cornflour

You can gradually knead in powdered sugar or cornstarch to make it less sticky. I also find the more you add in the quicker it stiffens up. This helps if you are in a hurry.

I agree with sugardujour and would just knead in more icing sugar if sticky (any brand).  A good paste that is quite firm is Karen Davies marshmallow paste but it is expensive.  It is a firm, nice tasting paste but when I have bought a very fresh batch even that was a little sticky and needed icing sugar.  I have used many brands but they all seemed to depend on how fresh they were.  The fresher, the stickier!  I only found one brand I would never use again and it is not sold now.

For white/ivory, I buy Covapaste in bulk. it’s a beautiful product to work with. It’s got a lovely silky smooth feel to it and a great vanilla flavour too.  Use Sugarflair gel pastes to colour it, if needed. Win-win in my books. Hope this helps x
