choc ganache

Hi everyone, i made the choc ganache and followed it to the letter, it was smooth, rich, lump free, once it was cool i put it in the fridge, i took it out the next morning to use and it was set solid, i had to cut chunks off and give it a gentle zap in the microwave, is it meant to do this, or should it be soft? any advice cake makers ? thanks x

Hello Treacle,

Sounds exactly as it should be to me. Mine sets solid once cool and has to be resucitated in the microwave before use 🙂 Hope that helps.

Hi Treacle

Zap it for 30 second intervals on medium heat until you get the right consistency. As it softens reduce the time, it takes a bit of time, just keep an eye on it so it doesn’t ‘burn’. You may need to keep soften it as you’re using, just zap it for 10 seconds intervals or less to bring it back. x

thankyou for the advice, i have never made ganache before and thought i had done something wrong, i usually use buttercream, choc or other flavours, but the birthday girl wanted choc ganache filling and coating, she also asked for it whipped so i made a vanilla buttercream and added it to the zapped ganache and whipped it in my kenwood and it made the most delicious filling, the birthday girl was v happy. i have been using the free side of pauls website for long time, but i bought a yearly subscription yesterday, ,got a request for a Les Paul Gibson electric guitar,looking forward to making it and with pauls help and the tutorial it should be good,i have watched it 4 times already.Thankyou ladies for your help 🙂

That is what is supposed to happen. CHOP off what you need and GENTLY heat so you can work with it.
