Thick and grainy ganache

Hi

I made chocolate ganache 2:1 ratio using tesco plain chocolate (found in baking section), kept in fridge for 3 hrs , now it is very thick and I was not even able to move my spatula in it , so I added a dash of warm double cream in it (a mistake) and it all turned , I think word is , grainy making it VERY difficult to use for frosting cake . What should i do , should i make a new one or something can be done

Ganache is not at all shiny or smooth as it should be and NOT AT ALL looks like that Paul uses

Hi Neha

Warm the ganache in the microwave on the lowest temperature for 10 seconds at a time. If there is a lot of ganache do it for 30 seconds for a short time, keep an eye on it. Once it begins to soften go back to 10 seconds. You’ll see it turning slightly runny, take it out and give it a good stir with a palette knife like Paul does. If it starts to thicken while you are working with it just pop it back in the micro as before. This has happened because the ganache has been in the fridge, there’s nothing wrong with it.
