1. Carving the cake
Paul gets straight to it and shows us how to quickly and easily form the head of our teddy bear. By the end of the lesson you’ll see just how easy it to create almost any cute animal head.
2. Ganaching the cake
Here Paul ganaches the cake with yummy dark chocolate ganache. If you’d like to see how he made the ganache watch this video. All you need to do is slap it on quite liberally and make nice big smooth motions with your palette knife and then go over it all with a hot, clean palette knife followed by a pastry brush.
3. Covering the cake
In this lesson Paul builds up the ears with some brown sugarpaste, attaching it with edible glue – but you can always use spare cake to do this. He then adds a muzzle and covers the whole thing in 4mm thick rolled out white sugarpaste, which he massages into place. Paul shows us two different ways to deal with pleats, to give you the option based on your skill level.
4. Adding detail
Here Paul adds a cute little nose and eyes, and then goes on to show us how to create fur-like texture using a mixture of tools, including PME modelling tools and sugar shapers.
5. Airbrushing the cake
Here Paul builds up the colours using a mixture of browns and yellows and gets the base layer done, before moving onto the darker colours to bring out the detail.
6. Airbrushing pt 2
In this lesson Paul begins to add more definition and depth using darker colours and building up around the ears and mouth. By carefully focusing on certain areas you can really enhance the 3D feel which you see in practise in this lesson.
7. Finishing touches
Here Paul finishes the airbrushing adding more colour to the muzzle by giving the bear rosy cheeks and a little more colour to the ears and so on. Paul then shows us how to cover the board in a lovely polka dot quilt using thinly rolled out sugarpaste.
