Highlights of our Santa’s Present cake tutorial.
1. Baking the rich fruit cake
In this lesson Paul takes you through each stage from preparing the fruit to mixing the ingredients and how to ensure the perfect bake.
2. Making the bow loops
In this design it’s best to start with the decoration to allow sufficient drying time. Paul rolls out florist paste then cuts into strips to make the loops for the bows. He then leaves them to dry in the oven at the lowest temperature keeping the door open.
3. Explaining the stand and covering in Marzipan
The stand is fairly straightforward, but Paul will explain all. He then goes on to marzipan the cake, sharing some of his college learned hints and tips along the way.
NOTE: Paul later discovers that it would have been useful to mark the underside of the board used for the cake to line everything up.
4. Covering the cake
This is a little bit different for Paul as he’s more used to ganache and sharp edges. However, rich fruit cake needs a marzipan covering so he brushes up on his round edges covering skills.
5. Adding the cake to the stand
This can be a little tricky, but the best way to add the cake to stand is to flip the cake. Don’t worry, Paul will guide you through every step of the way.
6. Adding the snowflakes and bow
Using a more pale shade of green Paul then cuts out and adds the snowflakes, being sure to cover any untidy spots. He then adds the the bow the start to give this design it’s festive look.
7. Making the first Santa
Time to get the Santas added. The first one is the tired Santa, watch how Paul prepares creates the pieces that all come together to make Santa holding up the cake.
8. Making the second Santa
Using the same starting shapes as before, watch how Paul now moulds the pieces to give this Santa a different look.
9. Making the third Santa
Time for a lying down Santa. Again, it’s the same shapes, but Paul shapes them to come up with this fun style.
10. Making our final Santa
By this stage you’ll be making Santas in your sleep! Paul just shows the different elements this time around and explains how to have your Santa upside down.
11. Making Santa heads
We have four different Santas in four different poses so they all need slightly different styles of head. Paul talks through the first two then we move to speeded up footage to see how he finishes the others. He finishes with a light spray glaze.
