1. Carving and ganaching
Using the recipe for the free chocolate cake, Paul carves out the dome shape and ganaches around the cake in preparation for covering.
2. Covering the cake
Once the cake has been covered in ganache and put in the fridge to firm up, we then move on to covering the cake with Santa’s knitted red coat.

3. Covering the board
Paul uses Karen Davies’ beautiful Snowflake Mould to cover the board around the cake.
4. Adding the belt
Sticking with the moulds, Paul adds on Santa’s belt using a lovely plaited border mould from Karen Davies.
5. Making the boots
Paul sculpts Santa’s boots from rice krispie treats, which are then covered using sugarpaste and added to the cake.
6. Finishing the body
To finish the body, Paul adds all the little trims around the coat and then the arms and mitts.
7. Making Santa’s head
Paul opts for using polystyrene for Santa’s head, covering it with sugarpaste and sculpting the cute Santa features.
8. Santa’s beard
To make the beard, Paul goes for a pleated look using Karen Davies moulds for long luscious locks!
9. Santa’s hat
If using polystyrene for the head, its best to be mindful of how sugarpaste is used for the hat as you don’t want to put too much weight on the wooden dowels holding the head in place.
10. Finishing touches
Paul adds some extra va va voom to really bring Santa to life!
