1. Making the stand

Using mdf wood Paul creates a solid stand for the cake. Cake drums can be used, but they won’t be as sturdy. This stand can be used for a multitude of designs.

2. Stacking and ganaching the cake

Paul now stacks the cake and carves to shape before adding a generous layer of ganache. Paul then spends time smoothly the ganache in preparation for the sugarpaste.

With us now being in the middle of the summer wedding season and Paul in Perthshire, which is renowned for its excellent summer fruits, he decided to create Mr Raspberry and Mrs Strawberry cakes.

  • Wild strawberries have been enjoyed by humans for thousands of years. Evidence of strawberry consumption has been found in archaeological sites from the Stone Age.
