1. Explaining the design

To begin, Paul goes over the cake sizes and how he got to the design.

2. Wafer paper ruffles

In this lesson, Paul starts to design the bottom tier by cutting triangular shapes out of wafer paper then using the pinking shears gives them a rough fabric look. Around 300 wafer paper triangles were cut out for the bottom tier. Once all the triangles have been cut and added, Paul uses the airbrush to paint the triangles blue which brings out depth to the cake.

3. Pearls

For the design of the middle tier, Paul has taken inspiration from a wedding dress and uses pearls and flowers together to create a bodice effect on the cake. In this lesson Paul focuses on the pearls, creating a geometric pattern.

4. Blue flowers

Now that the pearls have been added, Paul adds the flowers to complete the design and once again sprays it blue with the airbrush. 

5. Making top tier decorations

For the top tier, Paul decides to go gold and create a crackling effect using Magic Colours dust. He also creates sails by first scrunching up some grease proof paper and spraying it with cake release to prevent sticking. Then spraying wafer paper with a fine mist of water and delicately placing it in different shapes on greaseproof paper. When heating, the oven is left open for about 5 – 10 minutes.

Note: in the next lesson Paul decides to remove the gold cracked effect sugarpaste to make the effect stand out more before putting it back on.

6. More cracks!

In this lesson, Paul removes the top tier icing (very risky!) in an attempt to make the gold cracked effect more prominent.
