10’’ round, deep sponge cake by Mrs Jones ( can I make it in ONE tin) ?‏

I was planning on making the Navy polka dot handbag cake and wanted to follow Mrs Jones recipe for a sponge cake instead of chocolate tutorial cake. She bakes it into two tins but in Paul’s tutorial he uses one cake. Can I make it in one tin and if yes what temperature and how long do I bake it for.

Mrs Jones’ recipe is for the two tins. Victoria sponge recipes are very light and that amount of mixture can result in the cake collapsing. For one deep cake I would suggest using a stronger recipe such as an all in one sponge or try Jane Horby’s zingy lemon cake. This is a recipe used by many site members including myself. The recipe produces a denser sponge better for carving:
