Alcohol ( Baileys) replacement

Hiya, you use Baileys in your truffles and on chocolate cakes to enhance flavour. What would you recommend as an alternative? I have requests from customers who do not have alcohol for religious reasons.

Hi hafiza

There are lots of flavours which can be made by infusion method. For instance you could make simple syrup by boiling for a minute or two equal quantities of sugar and water or juice of your choice. While boiling add vanilla pods or any herb or spice to make an infusion. Cool the syrup and use in the same way as the Bailey’s. Some flavour ideas for infusion: Cardamom, cloves, cinnamon, chia or any other flavoured teas or fruit teas, Earl Grey, Lady Grey, Rose, Mint, lemon and the zest, fresh orange and zest. These are just a few ideas, there are limitless more. Get more ideas from your customers too! they may have some favourites. Strain off the infusion so all the bits are removed before you use.
