alcohol in fruit cake

Hello,

In the fruit cake recipe it says to soak all of the ingredients in 2 tablespoons of brandy, then it says further down to fold in the remainder of brandy, how much would you suggest adding at this point as on the ingredient list it doesn’t say an amount ?

Hi Stephanie

I’m assuming Mrs Jones is asking for the soaking alcohol which would normally be left at the bottom of the bowl, to be folded in. However, the two tablespoons of the alcohol will have been absorbed into the fruit leaving non for later. She hasn’t left instructions for how much more is to be added. You could add another two table spoons to loosen off the batter if it is too stiff. Or if you’d like a precise answer for this particular recipe, ( I use much more for soaking) contact Mrs Jones at her own school here:
