Best gluten-free sponge?
Hello, I’d like to make some cakes which need to be reasonably sturdy so I can carve them and either decorate with sugarpaste or chocoform (I’ve got Mayen’s rocket cake and Paul Bradford’s wrap cake in mind) but I also need to cater for coeliac-sufferers. Chocolate, vanilla and lemon sponges would all be very welcome. Any suggestions?
I’ve made Paul’s choc cake with gluten free flour and I behaved exactly like the gluten flour one does. I just use my usual recipes and substitute the flour with the Doves farm one. So far so good

Thanks to both of you! The recipe suggested using the link from madeitwithlove looks a little complicated to me as it’s made up of quite a few dry ingredients including ground almonds and I’m just not certain that I won’t have a nut-allergy sufferer at the party…
I’ll have a go at Ali244’s suggestion as I already have the Doves Farm gluten-free flour – fingers crossed! I may even end up doing a tier of normal and a tier of gluten-free of the same recipe so I can see if anyone can taste the difference – apart from the ones intolerant to gluten of course; that would not be good!
