What brand of white chocolate do you use for ganache?

Paul uses the Belcolade brand but he has used Lintz Belgium white chocolate bars. If using for ganache you can use any white chocolate which you enjoy eating. It would be a bonus if it is between 24-29% cocoa content. Avoid using white chocolate with mousse filling because it doesn’t set hard. If you need more information please post again.
