Bride and Groom cake

Hi, to place the stripes around the cake, how did Paul measure the cake to determine how many stripes he needed and the width of the stripes? In hot weather, like the one he was experiencing while making this cake, would you use ganache under fondant or something else, to hold up in the heat? In hot climates, could I refrigerate the fondant covered cake, wrapped in plastic wrap, then let it come to room temperature wrapped in the plastic, and unwrapping before decorating? This is the kind of weather I experience year round so maybe you can give me some tips on your learning experiences making cakes in hot weather during your time in Spain. Heat and humidity make working with ganache, gumpaste, fondant, chocolate, anything with sugar in general, so difficult! The only things that actually survive for me are pastillage and royal icing! Thanks!

the diagrams shows how to measure irregular verticle lines. However, the same principal can be applied for measuring regular ocurring vertical lines. I don’t have any experience working in the type of heat and humidity you are speaking of. There are many members on site who do and hopefully they will be able to give the benefit of their experience.
