brushing cake with syrup
I’m planning on making a madeira cake and crumb coating with buttercream and then covering with fondant. I have read all the posts about keeping the cake moist. One of them mentioned brushing the cake with sugar syrup, could I use elderflower cordial? How long would you recommend I leave it then before doing the crumb coat?

It should work, if you want to flavour the cake. Brush sparingly, you can crumb coat as soon as it is soaked in…5. Min
If it’s commerically made cordial, go carefully with the undiluted solution as it can be extremely strong and will spoil the taste of the cake. Home made syrups are usually a 1:1 ratio of sugar and water. This is a far reduced concentrate than ready made. Taste it first before brushing. If it is very strong you could always make your syrup and add some cordial to it for flavour. Leave to soak as suggested by Sue-Wales.

I think my daughter actually was hoping for the elderflower cordial to give some flavour but maybe I will add some to a sugar syrup and taste first. I look forward to trying it,
