Cake moistness
Hi
I have 4 cakes to ganache this week would it be okay to start this today how long will the cake be moist for they are due to be given on Friday . I have. teddy bear faces to make for Saturday could I make that’s in advance also if so how do I store them

It really depends on the type of cake you’re using. Most cakes have a shelf life of five days even though they are ok for a few days more. What type of cakes have you used? Have a peek here for an answer with addtional links: http://www.cakeflix.com/questions/advance-baking
I think to start today is too soon if you’re using sponge cakes. Cakes made in advance can be frozen until required. Defrost cake overnight still wrapped in clingfilm to retain moisture. Once decorated keep in a cake box with lid and store in a cool enviroment.

Paul’s recipe does last slightly longer because of the amount of sugar it contains but I have to go by what David has stated about the shelf life of this recipe. If the cakes are for clients I wouldn’t take the chance with them. It would be a different matter if they are for family. The only thing I can suggest is to keep them as cool as you can and keep them covered up and refrigerated if they’re not already iced. Anything with buttercream covering can be placed in the fridge but not ones sugarpaste. Will the cakes be definitely eaten on day of delivery? The problem is, the cakes will be 6 days old on day of delivery. I like to deliver mine on the thrid day which leaves a clear 2 days for them to be eaten. It is really important to keep the cakes covered up to protect them from airborn bacteria and mould spores.
