Welcome to the Cake Decorators Q&A
Can a frozen cake be iced?
I have a ganached cake in the freezer that requires a sugar past coat, which in turn needs to dry before decorating. Can the frozen cake be iced and will this effect the icing or drying time?

Thank you for your speedy reply. I can now schedule my work and give an extra day for defrosting .
Hi Shaar
It’s not a good idea to ice a frozen cake. As the cake begins to defrost it will make the icing melt into a gooey mess. It’s not likely to dry without problems. Best to defrost the cake, wait until the dew which forms on the ganache to disperse and then ice.
