Can I freeze a finished cake?
Hello, just wondering whether anyone has frozen a completely finished cake (with ganache/buttercream and sugarpaste)? If so, any tips on wrapping awkward shapes etc? Thanks 🙂

General advice is not to freeze or refrigerate iced cakes, because of the moisture problems which attack the icing. I should think it would freeze ok providing the packaging is sturdy enough. My own experience was not a good one but you can see here http://www.cakeflix.com/questions/freezing-decorated-cake a member who did it successfully. I think the best way to freeze would be without any ornamental decorations. The cake would have to be wrapped in many layers of cling film, large bin liner and placed in a heavy duty cardboard box then completely sealed. The idea really is to keep as much moisture from entering the box. Same would apply to awkward shapes.
To defrost, take all the wrapping off place in a normal cake box and leave at room temperature without touching the icing which will begin to dew and sweat. The icing invariable dries shiny as if it has been sprayed with glaze.
Hi I have frozen a finished cake with sucess cake had buttercream and fondant put cake in th box and wrape in many layers of cling film and I then wraped a couple of carrier bags around it whwn defrosting take out of frezzer and do not be temted to touch any part of the cake with mine you had never known it had been in the frezzer for two weeks did not affeft the taste at all
