Can I set Ganache in the fridge to cover in Fondant?
Due to circumstances totally out of my control!
I am now a DAY away from having to deliver a 5 tier wedding cake, the cakes and ganache have been made, but are still on the top waiting ganaching.
Can you tell me, as you set ganache in its various stages in the fridge as you are applying, could you (if absolutely the last resort) set the whole thing in the fridge for say 1/2 hour or even 1hr then disturb the surface and apply fondant straight away?
I am in a disaster zone if you can’t but no other idea of what to do, and I so wish fairy godmothers were real!

You can start decorating the cakes as soon the ganache sets, whether in the fridge or out. It just has to be a little tacky so the sugarpaste sticks down on it. I expect you’ve already started anyway so you’ll know how much it has set. Please let me know if you need more information. Good luck with wedding tomorrow! x
