can I use ganache under fondant icing on a fruit cake for a wedding.
I have googled and searched for any suggestions, but really haven’t been able to come up with anything other than “marzipan must be used under fondant on fruit cake or 2 layers of fondant”. Is this just tradition or a rule for another reason? Also, is there another way of filing the holes in the fruit cake without using pieces of fondant? I was wondering about making a paste from the off cut pieces of cake (mixing with some alcohol maybe) and using that to fill the holes – not sure if this would work or not.
Thanks for any advice – it is a wedding cake for my son, so I have to impress the opposition!!!

Fill the holes any way you find best as long as the they remain plugged. I find marzipan is best for plugging. If you make a cake pop type mix with ganache and cake that too may well work.
