I’m not sure how ganache made from Caramac would set. It has absolutely no cocoa solids. It’s ingredients are listed oils, a bit of milk powder, sugar and emulsifiers. Initially I think I would treat it like white chocolate and follow the quantities for white ganache. Make a small amount first, let it set overnight at room temperature and if it’s still very soft add more melted Caramac., taking care not to burn it during melting.
