Carrot cake with cream cheese icing

Hi guys, made some carrot cakes recently (still trying to perfect my recipe) but every time I make cream cheese icing it goes more runny than firm. I would like it to be piping consistency but at the moment it’s too runny.

Can anyone advise of a good recipe for both?

Carrot cake from planet cake. Just add in a few pecans. Cream cheese frosting… My fav recipie is from the cake decorating bible by Juliet Sear. This frosting is not runny as it also has icing sugar in it. Well it works for me. Mx

Hi, we have found that if you over beat cream cheese it goes runny.
