Carving vanilla sponge
I can’t seem to find a good recipe for making vanilla sponge that doesn’t crumble when carved. If I have to make a carved cake, it always gets spoilt as the sponge isn’t right. I’ve tried Jane Hornsbys recipe as advised previously but still the same. Pauls chocolate cake looks the perfect carving cake but need vanilla sponge.

The trick is to carve the cake very well chilled or partially frozen. I have use the Jane Hornby vanilla cake for carving, it works really well for me. Failing a sponge, madeira cake carves extremely well and has a shellflife of approx 2 weeks. There is also Jane Hornby’s zingy lemon recipe. I used this one for carving out ethnic drums.
