Chilling cakes
Hi I notice Paul said to put the buttercream cake in the fridge for a hour to firm up. Before he places the sugarpaste on the top I have always been told not to do this as it causes moisture in the cake. Once brought out to room temperature and you place the sugar paste on the cake then causes air bubble under the. sugar paste so my question is should we chill our cakes and if so what temperature should our cake. Fridges be set at and do we allow the cake to come back to room temperature before we place the sugar paste on or not ? And if so how long do we wait for the cake to come back up to the room temperature, I so confused by this

I personally don’t put my buttercreamed cake in the fridge because I then get air bubbles which I don’t get if I’ve left it at room temp. I either cover the cake straight away or if its sat for a while and the buttercream has crusted I dip a spatula in hot water and go over it to wet enough for the sugarpaste to stick. I do what works best for me!
