am looking for a book that has chocolate paste ,chocolate modeling and using ganache.

You may be able to get it cheaper else where although Waterstones is free post so you’d have compare carriage.
I don’t know if either of these books have ganache recipes. You could try books by Tracy Mann, she works mainly with chocolate. There are thousands of ganache recipes online, just google how to make ganache. Hope some of this helps.
