chocolate ganache with butter

Hi,

I just want to ask if its ok to add some butter to chocolate ganache just so it doesnt set to hard, my ganache sets really hard and my family dont like it that way, but if I add butter to make it softer im worried it will be hard to fill and cover the cake with

Hi Allthingspretty

I use butter in my ganache all the time for filling, it’s lovely and keeps the ganache soft and fudgy. You can cover with it as well but some times it doesn’t set hard enough if you enrobe with sugarpaste. I would suggest use butter in your ganache filling but not in your crumbcoat if you’re covering with sugarpaste.
