Hi

I have tried Moist chocolate recipe two times and the cake were superb , until today when 2 batches failed terribly , the cake were dipped from middle and were not deep, so finally I made vanilla sponge cake . My problem is that to go with chocolate cake I already made a good quantity of chocolate ganache , I want to know can this ganache go with vanilla cake or I have to make white ganache for it

Hi Neha

You can use what ever you want with sponge cake, so yes, you can use your already made up ganache. When I use dark chocolate ganache with vanilla sponge I spread a little raspberry or black currant preserve as well. It’s all down to personal preference.
