Is your candy thermometer digital? If it is it will make life easier because it is more simple to read. As long as your thermometer can read the range between 20 degrees centigrade and 40 degrees centigrade then you can just use it. However if it is a stand in sugar thermometer it will be more difficult to read. I use a simple digital probe for all temperature measurements.
Other than that you can temper the chocolate on your worktop by cooling it back and forth with a scraper until it begins to thicken. Once it begins to thicken scrap it all back into your bowl. Dip the corner of a piece of parchment paper into the chocolate and leave it to set. If it sets within three to five minutes it is tempered. Seeding method can be used. Melt two thirds of the chocolate gradually at increments of 30 seconds on high power at first, reducing to medium.. Stir after each increment to distribute the heat in the chocolate. This is crucial to prevent chocolate burning!! Chocolate melts at blood temp so taking care is of the utmost importance. Reduce the increment time as the chocolate begins to melt. Once melted, the chocolate will be warm. Add to it the remaining third chocolate a little at a time, mixing until each little bit has melted. When all the third is combined and melted through, the chocolate is tempered. Sometimes a few lumps remain, if these do not melt down within a minute, warm the chocolate on low power for 2 seconds and stir. Stirring gently is extremely important after each heating to prevent burning. Once all the chocolate is melted use the above paper method or a tip of a knife. Experienced chocolatiers dip the tip of the knife into melted chocolate and touch it immediately to their lip. If the temp feels exactly the same as their body temp this indicates tempering is complete.
For us mere mortals it is worth investing in a good thermometer for perfect tempering. The thermometers are extremely inexpensive and could save you a fortune in the long run.
