Chocolate Wrap Cake

I’ve been asked to create a White Chocolate Wrap for a wedding, first time I will have done it commercially.  Their guest list is 120 – using the basic portion numbers a 10″ x 8″ x 6″ would be about 70 portions.  Can anyone give advise of what dimensions I would need to use for a larger cake that would feed closer to the 120 guests?

a 6″ 10″ 14″ gives 126 1x2x4 servings.  not sure what your serving size is though.  Im in the US.

if they save the top tier then -10 servings.

I’m doing a white chocolate wrap next week – I’m doing a 4 tier (12″, 10″, 8″, 6″ + dummy cone).  I’m working on the theory that if the cake hadn’t been carved to get it into a cone shape I would have got in the region of 60+40+24+12 = 136 – 2″x1″ pieces.   So, I’m thinking that taking into account the cake has had bits shaved off that perhaps it will yield around 120 pieces.   The cake I’m making needs to feed 100 people, so I reckon I’m well covered with the sizes I’ve chosen.  I think you will be alright too, but I would make sure the person who’s cutting it up knows it’s not an exact science (!) and to err on the side of caution when measuring out 2″x1″ slices!!  I’m actually making this cake for a relative and I’ll be the one cutting it up, so if you like I can get back to you in a couple of weeks and let you know how many pieces I did actually get out of it?

Thank you so much to both of you, that is very helpful.  I would definitely be interested to know how it cut , how many pieces.  Also fascinated to know how the cutting goes!!!

Would anyone happen to know how much cocoform I would need for a 12, 10, 8 and 6″ choc wrap cake?

For the cake I’m doing next week, the same sizes as yours, I’m expecting to use 2 kgs of cocoform, but I’ve got 3 kgs to be on the safe side!!  Any that’s left over will get used up on other cakes eventually!

Thanks so much for that. I have ordered 2kgs and also made some of my own to make the roses so I think I should have enough.

Hi Debbie, well just got back – the chocolate wrap cake went down a storm and was a real talking point throughout the wedding, no-one had ever seen one before!! Anyway, getting back to sizes. We didn’t cut all four tiers as it turned out the cake was being served alongside the evening buffet rather than being cut and handed out to each guest – so, we only cut the two top tiers to see how it went. We didn’t stick to 2″x1″ pieces, some were smaller – we ended up getting 25 pieces from the 6″ and 50 pieces from the 8″, so you’ll have plenty with 6,8,10 and 12″ cakes. The hotel gave us a serrated knife to cut it with. It was murder. You definately need a straight edged knife or something similar. I also dipped the knife in hot water, which helped with the cutting.
Cocoform – 2kgs will do it. I slightly broke into the 3kgs, but to be fair, I wrapped my cake tighter and with more frills than Paul, so 2kgs would be enough.

My chocolate wrap cake was made for the weekend too and was a great success! I made it with the 12, 10, 8 and 6″ and the bride said there was plenty. I bought 2kg of white cocoform and still had plenty left over. I used my pasta machine and because I rolled it quite thin I obviously used less, also the bride decided she wanted some fresh roses in the ruffles so didn’t need to make any extra with cocoform. Hi Debbie, Ah, that’s great, I didn’t realise you were making yours the same time as mine! I do run mine through the pasta machine to get it thinner, but I just had loads of layers on this one! I will have a look at your photos, thanks! I’ve only put one (on the front page!) of my website, I’m going to have one of the photographer’s proper photos, eventually, to add to my wedding page.
