Hi, I have never used moulding choc, but what about putting on a coloured dusting on top of the roses, like Paul does. ie Christmasberries etc.

If you’re making the roses with dark molding chocolate dusting them red will not achieve a dark red rose colour because the red would be somewhat lost in the colour of the choc. If you use the lustres you’ll get the effect which is shown in the traditional Christmas cake decorations. To achieve a true dark red you’d need to colour up some white molding chocolate with ruby and a pin prick of navy, it may also be necessary to add red extra as well. Oil based or powder colours work best with chocolate. I experimented with the colours a little while ago and achieved a dark red like Valentine’s day rose. You may need to add colour to molding choc more carefully until you get the shade you’re looking for.
