Hi, can you tell me if it will make any dramatic difference if use the ingredients for a 14″ cake ,in a 12″ tin to make it deeper? thanks

Hello chrissy

It depends on the recipe. If the recipe is for a 3″ deep cake it will bake a cake 4″ deep. You will need to make the lining parchment paper tall enough to contain any spillage. The bake time will also have to be increased because the centre of the cake will take longer to cook. I would recommend lagging the outside of the tin to prevent the sides of the cake drying out or burning. If you have Ateco heating cores or metal royal icing flower nails place them flat side down in the batter to help distribute the heat.
