Paul rarely has the opportunity to visit the Q & A section so I hope you won’t mind me answering your question. In the tutorial Paul used a 10″ square cake and cut out three rounds of 6″, 5″ and 4″ cakes. Based on single layer 3″ deep cakes, as a guesstimate, all three would yield approx 30 x 1″ x 2″ portions. After carving, yield will be slightly reduced unless you want to give smaller portions.
