Hi,

Is it possible to colour white chocolate covering paste to black? If so, what type of colouring is best?

Yes it is possible. However for best taste and consistency it’s worth buying the ready coloured pastes. If you need to make it, darken the paste first either with some cocoa powder or combine it with dark chocolate paste. The dark base will enable you to use less colourant. Adding too much colour to either sugarpaste or chocolate paste changes it’s taste and consistensy. When colouring chocolate paste use oil based colours, water based ones will render the paste grainy and un-useable. Squire’s Kitchen and The Cake Decorating company both stock ready coloured chocolate pastes, coloured callets for making paste at home and oil based colourants. Hope this helps.
