Hi, I’m looking to bake 8″ and 6″ deep sponges for my daughters birthday, and am looking for advice on fan oven temperature and cooking time for each sponge please.

I’m using Mrs Jones’ vanilla sponge recipe with adjustments for the tin size (have taken advise from the question asked previously ‘foolproof sponge cake recipe’. Thanks Scarlet!).

Since this a sponge cake I would recommend that you contact Mrs Jones. She is the author of the recipe and the best person to advice you on timing. The temperature should remain the same 160c fan. I am sure she will be delighted to point you in the right direction. Just let her know that you are using her vanilla cake recipe on the Paul Bradford site.
