Hi, I have to marzipan a madeira cake that is sitting directly on top of a marzipanned fruit cake to make a really tall cake (6″ wide) Can I ganache the madeira prior to putting on the marzipan or should I use buttercream? The cake will be 6 layers deep. thanks

Chocolate and marzipan, a match made in heaven! It will be better than using buttercream. If you have problems draping the marzipan over six layers, try using the wrap around method instead. ?
