If cupcakes are not removed from the pan immediately steam can form condensation and make the case peels away. Corn flour is added to make sponges much lighter in texture.

Try dr oetker cases, I don’t have a problem with these, but have had the same problem with some of the fancier waxed ones. I also use a spoon handle to swirl the mixture around the case, just before putting into the oven, maybe it just allows the mixture into the pleats of the case, but someone once mentioned this to me, and I always do it, strange I know, but it seems to work 🙂
Oh, and I always bake my cupcakes in the deeper muffin style tins/pan, think this allows the cupcake to keep a nicer shape.
Hope this helps, as i know how annoying it is.
