dark choc or white choc ganache

Is it best to use dark choc ganache as all the cakes @Paul Bradford are usually covered with dark choc? Members of my family are not very keen on dark choc ganache especially with vanilla cakes. Please advise, and for Paul to show ganaching some cakes with white choc..Thanks

One of the free lessons covers using white chocolate ganache – I’m using it next week for a wedding cake…eek! 🙂 Here’s the link http://www.cakeflix.com/online-cake-decorating-courses/free/white-chocolate-ganache

Hi rosawan

Paul is using a yellow sponge cake here http://www.cakeflix.com/designer-flapback-handbag-lesson-1-shaping-the-cake He could have equally used a milk or white chocolate ganache but his personal preference is dark because the higher cocoa contents allows the ganache to set up faster. It’s up to individuals which ganache they use. The ganache chart here http://www.cakeflix.com/blog/how-to-ganache-cakes-without-gnashing-your-teeth might be useful.
