Dark chocolate ganache

Can I use dark chocolate ganache and then cover it with white fondant? I am worried that it will show through. Also will this last for 1 week.

Yes you can cover a dark chocolate ganached cake with fondant, Paul does it all the time in all the tutorials and now this is how most cakes are done. The ganache will last longer than one week, the only thing which should be considered is the type of cake you are using. Most sponge cakes have a shelf life of five days, madeira cake two weeks from decorating to eating, some mud cakes up to ten days, Paul’s moist chocolate cake has shelf life of five days but it does last a lot longer.
