Defrosting a buttercream/ganache sponge.
I am taking a sponge cake out of the freezer today, it has been filled and covered with buttercream/ganache, do I leave it wrapped in cling film or remove this to let it defrost?

Hi nicky223
It’s best to leave the cling film on but if you are defrosting in a box it can be taken off. Keeping the cake in a box also helps it adjust gently to room temperature.

Cake was fine, I let it defrost with the clingfilm on, next time I will try the other way and leave it in the box. .
