Dry cake

Hello everyone

Yesterday I made Mrs Jones vanilla sponge cake for doll cake and presented to my friends daughter , her husband is head chef in a hotel and he said that the bread was but dry and I should do something to make it moist . Please can anyone suggests me where I did wrong in following the recipe or is there any other step that should be taken to make cake moist

Hi Neha

It’s possible the oven temperature was slightly too high or perhaps you may have baked the cake a little too long.
If you don’t have an oven thermometer it’s worth investing in one just in case your oven temp gauge is out.
I find Victoria sponge cake can dry out quite quickly if not wrapped up in cling film as soon as it cools. Moistening the layers with a little simple syrup prior to filling helps to keep the cake moist.

Thanks for reply . How should I use sugar syrup , isn’t that going to make cake sweeter with sweet filling

Apply simple syrup to cake layers on both sides before filling. The syrup keeps the cake very moist and extends shelf life by a couple of days.
It can be flavoured to compliment the cake flavour and does not noticable over sweeten. If using extract flavours add to the syrup when cool. If using whole spices or vanilla pods add at boiling stage and leave to infuse. The longer you leave to infuse, the stronger the flavour. Split vanilla pod, scrape out the beans and add to the syrup. Strain off whole spices.
