Duck eggs

Hi, I need some advice on using duck eggs in baking please. Some sites say to weigh the eggs and use required amount and others say use same amount of eggs as yolk white ratio is different. Many thanks. Maria

Hi Maria

When I can get them, I just use them as I would chicken eggs, no changes. The yolks are slightly bigger but don’t worry about it. Your cakes will come out lovely soft and moist because of the extra fat duck eggs contain.
