Any one know of a book or where I can find egg free recipes for all sized cakes… up to 12-13″

Scaling up egg free recipes isn’t very easily done. Egg substitutes such a baking powder, Ener G egg replacer and flax seeds leave an after taste when used in large quantities. There is a ready reckoner and cakeometre here http://www.cakeflix.com/blog/how-to-work-out-what-size-cake-tin-to-use to help with scaling up. It may be better to use the cakeometer in this instance as it will take into account the leavening more accurately than the ready reckoner. There is also a link in that blog for suppliers of egg free cake mix which would be another alternative if you’d prefer. I’m still working on improving the recipe in the blog.
