Firm vanilla sponge recipe
Help please. I have a Ferrari cake to make soon but the customer wants vanilla sponge instead of chocolate sponge. Does anyone have a firm and tried and trusted recipe? Think I’ll need a 10″ cake like Paul uses on his beetle cake. I know freezing the cake will probably help too but have never tried this before as worried about the cake sweating too much. I’ve persuading the customer to have ganache though so that’s a bonus.

Hi there, I was asked to do a Ferrari cake and I just used a good old fashioned Madeira sponge
Recipe as follows is for a 10″ square
1lb 8oz (700gm) Self Raising Flour
1lb 4oz (570gm) Caster Sugar
1lb 4oz (570gm) Margarine
Eggs 10 Medium
Milk 6 tbsp (if required)
Vanilla essence 1-2 tea spoon
Bake at Gas Mark 2 for 2-2 1/4 hours
