Fixing sugarpaste to cookies

Hi, I wanted to check what’s best to use to stick sugarpaste to cookies. Is edible glue better than say a thin layer of jam which I was thinking about to add extra flavour, but I don’t want the cookies to go soft. Many thanks in advance.

Hi, I’ve used royal icing to stick sugarpaste to cookies and it works very well because it dries hard. Edible glue also works fine. Interesting suggestion about the jam, I haven’t tried that!

Hi suzyq

Lots of suggestions from Paul here:

I use piping gel, it has no flavour and you only need a little bit to make the sugarpaste stick.

Hope this helps.

Thanks for your suggestions. I’ve used piping gel before but don’t have any at the moment and wandered if the other options were just as good. I might use the edible glue this time as I’ve made a new batch up. Cheers x

Hi again, I’ve covered all the cookies with edible glue and left them to sit overnight covered with kitchen roll so theyve had time to set. Having checked one of them this morning, they appear to be slightly soft rather than crisp. Is there anything I can do to dry them out more? I shall be bagging them up in cellophane bags so am worried they’ll sweat in them as they won’t be opened until Sunday. Thanks again x

Unfortunately the glue has made the sugarpaste very tacky and the only thing to do is allow the cookies plenty of warm ventilation for the paste to dry. Do you have an airing cupboard where you could store them or do they have to be bagged today? Sometimes popping them in an oven with just the oven light as the heat source helps. A couple of days ago I had the same problem with the glue around my flower petals not drying, I left them near a radiator and they dried off nicely. Any possibility you could place the cookies near a radiator.? As you’ve correctly pointed out, they will sweat if you bag them up while still tacky. If you are not able to do any of the suggestions, place them on cake cooling racks so they have all round venilation and leave them in a warm sitting or dinning room. Hope some of the suggestions work for you. x

Apologies, it’s the cookies themselves and not the sugarpaste that’s soft. I do need to bag them today as they’re being collected late pm. Thanks x

My mis-understanding! I don’t really think you can crisp up the cookies without re heating them which isn’t an option with yours. I find most cookies soften with each passing day. If the glue and the paste are completly dry they shouldn’t sweat. It’s only dampness in the paste which can cause sweating. I would leave them near a radiator to dry them off a bit more, this is just in case the moisture from the glue caused them to become soft. You’ve got a couple of hours before the cookies are to be collected so it might just work. Hope so! x
