flavouring and coloring ganache
Hi. How would you recommend flavoring ganache … or wouldn’t you?? Some people don’t like the overly sweet taste of white chocolate / white chocolate ganache. Also, it may have been mentioned but I just can’t find it now, how would you recommend coloring white ganache (gel colors or something else?)

For colouring ganache use oil based colours, water based colours will make the chocolate seize and become grainy.Squires Kitchen have a good range of chocolate coloures as seen here:
